⚖️ Adjust Recipe Servings / Pizzas:
A cast-iron deep-dish pizza with pepperoni, spinach and a generous cheese layer. The filling is cooked and cooled first so the centre sets cleanly.
Ingredients
- 450 g pizza dough
- 200 g mozzarella, grated
- 80 g pepperoni
- 200 g baby spinach
- 250 g thick tomato sauce
- 30 g grated parmesan
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- Fine salt and black pepper
Method
- Heat the oven to 220°C. Oil a 25 cm cast-iron skillet, including the sides.
- Wilt the spinach in a dry pan, cool and squeeze out as much moisture as possible.
- Press two-thirds of the dough across the base and up the sides of the skillet. Add half the mozzarella, pepperoni, spinach and remaining mozzarella.
- Stretch the remaining dough into a lid. Lay it over the filling, pinch the edges together and cut three small steam vents.
- Spread tomato sauce over the top and add parmesan and oregano.
- Bake until the crust is deeply golden and releases from the pan. Rest for 10 minutes before slicing.
Pizza 0 tip: Resting is essential. The cheese and filling set as the pizza cools, producing cleaner slices.
Make it your own
Replace pepperoni with sautéed mushrooms or add roasted capsicum, making sure every vegetable is dry before layering.
