Earthy mushrooms, crisp pancetta and three cheeses make a savoury pizza with a rich aroma and a crisp, uncluttered base.
Ingredients
- 1 ball pizza dough (about 250 g)
- 120 g mushrooms, thinly sliced
- 60 g pancetta, diced
- 80 g fontina, grated
- 80 g mozzarella, grated
- 20 g parmesan, finely grated
- 1 teaspoon fresh thyme leaves
- 1 teaspoon olive oil
- Black pepper
Method
- Cook the pancetta in a dry frying pan until it begins to crisp. Transfer to paper towel, leaving one teaspoon of fat in the pan.
- Add the mushrooms and cook over medium-high heat until browned and dry.
- Preheat a pizza stone or heavy tray at the oven’s highest setting for 35 minutes.
- Stretch the dough to 30 cm. Scatter over fontina and mozzarella, then add mushrooms, pancetta and thyme.
- Bake until the rim is browned and the cheese bubbles. Finish with parmesan and black pepper.
Pizza 0 tip: Browning the mushrooms first concentrates their flavour and removes moisture that could soften the crust.
Make it your own
Replace pancetta with caramelised onion for a vegetarian version, or finish with a little truffle oil.
